Indeed this fried rice looks perfect, Kelly. So here I am, going to try it today. If the rice has been kept in the freezer it should be good! Cold rice is a great tip. I always freeze my ginger. The flavours are definitely because of the soya sauce, oyster sauce and sesame oil at the end.
So much better than take-out and, in the long run, even cheaper. I wouldn't hesitate to serve it to guests. The rice has the nice flavor of the sausage. When the rice is finished cooking, turn off heat and keep covered - no peeking! Thanks for the tips Kelly!
